The existing area of the bulghur factory, established in Karapinar Organized Industrial Zone, is 120 thousand square meters, its project area is 62 thousand square meters and indoor area is 24 thousand square meters.
The wheat processing capacity of the factory, which has a wheat storage capacity of 36 thousand tons, is 120 tons / day and bulghur yield of this process is 90 tons/day.

Controlling and monitoring of the product, during the process from the purchase of the wheat to turning it into the final product, is carried out through fully automated systems. A high quality production process is executed in terms of taste, flavor and color. The highest level of hygiene and sanitation, two of the most important elements in food, is provided. The fact that the plant has the latest machinery and equipment allows efficiency and thus ensures energy costs to be lower.
“Full automation system,” which begins with the receiving process of high quality wheat
Automation process begins when the wheat enters the facility at The Karapinar bulghur factory. All analyses are conducted using precise laboratory devices of the latest technology in preliminary acceptance laboratories for the wheat, which is defined and registered through vehicle recognition and barcode system. Wheat vehicles which receive barcodes and are registered according to quality criteria are sent to be unloaded, to be taken to silos. Wheat is put through a cleaning process and some foreign materials in it are removed before it is taken to the silos. Temperature control and ventilation process of the wheat in the silos is monitored through computer. The facility has a capacity of storing a total of 36.000 tons of wheat in 6 silos with a capacity of 6.000 tons each and unloading capacity of 2x150 tons/h.
“Efficient management and control of production” from the field to the table in the food safety chain
The wheat, which is placed in the process to be turned into bulghur, is first put through a cleaning process. All foreign materials in the wheat are removed by cleaning machines during this stage.
One of the elements, which affects the quality of bulghur is good cleaning. Machinery, equipment and devices, which separate according to color, utilizing the latest technology in the world, are used in The Karapinar Bulghur factory at this stage as well.
The Cooking and drying system which is used for the first time in Turkey
Cooking and drying is one of the most important stages, which affects the quality of bulghur. One of the aspects, which sets Torku bulghur apart from the others is that the cooking and drying stages, which have an extremely important impact on quality, are carried out in fully automated machinery with high technology.
Thanks to this system, which is used for the first time in Turkey, homogenous cooking and drying is ensured.
Cleaned wheat is kept in soaking vessels at certain temperatures for a while and then steam cooked at high pressure and temperature. It is ensured that the starch is gelatinized completely and all grains are cooked homogenously, without dissolving and remaining raw.
Boiled wheat, obtained after cooking is placed through pre-drying and drying stages gradually and all grains are put through a homogenous drying process to ensure the same humidity level in all the grains.
All surfaces, which come into contact with the product, consist of materials, which are stainless and suitable for food. Cooked and dried wheat, called “diri” is obtained at the end of the drying stage.
Combination of technology and taste, which comes from natural stone
Diri bulghur is run through peelers first and then crushed in stone mills and sifted in sieves and put through a gloss process if necessary and taken to silos at this stage.
The facility also has roller crushing system. The latest machinery and devices are used at this stage as well.
Product is run through devices and cleaning machines, which have optical readers, which can separate according to differences in color and specific weight and is taken to packaging silos before packaging.
Products, which are produced and packaged in hygienic conditions, untouched by human hands are run through weighing devices and metal detectors. The product, which is stored at suitable storage conditions, is offered to the consumers with Torku Çatalhöyük brand through a sales network, which reaches throughout Turkey.
Karapinar bulghur factory has laboratories, equipped with modern devices, to carry out all kinds of analyses, tests and checks at every stage, from raw material to end product.
